Will Steger was adamant about eating butter for endurance on polar treks. Do you use some similar type of food? You are an inspiration for all. Keep on trekking!
We are consuming dehydrated foods on our expedition. We have a variety of dishes; for instance we have hash browns and multi-grain cereals for breakfast and we had chicken with almonds for dinner the other night. We eat a lot of complex carbohydrates such as rice, grains, bars and of course we eat GORP (good old raisins and peanuts). We also try to consume lots of high calorie foods such as butter and cheese.
We had originally intended to consume about 6,000 calories a day but we're finding we just can't handle that much food. We are maintaining a diet of about 3,000-4,000 calories daily.
